- 150g brown rice
- 1 tbsp all-purpose seasoning
- 1 onion
- 50g grated mature cheddar
- 1 tsp veg oil
- 4 tomatoes (halved)
- 1 tbsp medium curry powder
- 1 tsp parsley
The Method
- Boil the rice to packet instructions with the all-purpose seasoning mixed into the water, then leave to stand with the lid on for 5–10 minutes
- Chop the onion, then mix with grated cheese and curry powder into the rice
- Spread the oil in a pan and heat
- Add the rice mixture and spread evenly
- Press the tomato halves into the rice
- Sprinkle the parsley over the top
- Cover the pan with foil (tightly wrapped around the edges) or use a lid
- Cook over a low heat for 15 minutes (the underside and edges of the rice should slightly brown and crisp up)
