- 400g sweet potato
- 1 tbsp veg oil (rapeseed)
- 1 tsp paprika powder
- Salt and pepper to season
The Method
- Pre-heat the oven to 200°C
- On a baking tray, use your fingers to mix the sweet potato wedges with the other ingredients
- Spread the wedges evenly across the tray
- Bake in the oven for 30 minutes, turning after 15 minutes so they brown from all sides

So simple but these wedges make a great addition to any BBQ. We also love them as an easy side with Caribbean/Creole meals.
