Sweet Potato Wedges

  • 400g sweet potato
  • 1 tbsp veg oil (rapeseed)
  • 1 tsp paprika powder
  • Salt and pepper to season

The Method

  • Pre-heat the oven to 200°C
  • On a baking tray, use your fingers to mix the sweet potato wedges with the other ingredients
  • Spread the wedges evenly across the tray
  • Bake in the oven for 30 minutes, turning after 15 minutes so they brown from all sides

So simple but these wedges make a great addition to any BBQ. We also love them as an easy side with Caribbean/Creole meals.
