Crumbly Apple Cake

  • 125g soft butter
  • 125g granulated sugar
  • 3 medium eggs
  • 1 tsp vanilla extract
  • 175g flower
  • 500g apples
  • Whipped cream (German style)

For the Crumble

  • 75g granulates sugar
  • 20g butter
  • 30g flour
  • Sprinkle of cinnamon (optional)

The Method

  • Preheat the oven to 170°C (fan)
  • Whisk the butter, sugar, eggs and vanilla
  • Slowly add flour and baking powder, continuously stirring the mix
  • Grease a springform and cover with a fine dusting of flour
  • Add the cake mix and then arrange the apple slices on top, slightly pushing them into the mix
  • To make the crumble, mix sugar, butter and flour with your fingers until they form crumbs — spread these over the apples
  • Bake in the oven for 30 minutes — to check if the cake is cooked, poke it with a toothpick, if any crumbs stick to it, let it bake a little longer
