- 2–3 courgettes (around 600g)
- 90g pesto
- 1 large onion
- 6 tomatoes
- 50g seed mix
- 50g grated cheddar cheese
- pinch of cayenne pepper
The Method
- Pre-heat oven to 175°C (fan)
- Thinly slice the courgettes and mix with the pesto
- Slice the onions and tomatoes
- In an ovenproof baking dish, create a layer of courgette, then a layer of tomato and then onion — repeat with another layer
- Mix the seeds, cheddar and cayenne pepper and then sprinkle over the top of the final layer
- Bake in the oven for about 20 minutes (the cheese should go nice and crispy golden)
