Baked Blueberry Cheesecake

  • 200g soft butter
  • 4 eggs
  • 200g granulated sugar
  • 1 tsp vanilla extract
  • 150g coarse semolina
  • ½ tsp baking powder
  • 1 tbsp lemon juice
  • 1 kg quark
  • 150g blueberries (fresh or frozen)

The Method

  • Preheat the oven to 200°C (fan)
  • Whisk the butter, eggs, sugar and vanilla then add the semolina and baking powder
  • Stir in the lemon juice and quark
  • Carefully stir in the blueberries
  • Grease a springform cake tin with butter and then cover with a light dusting of semolina (this will make the baked cake really easy to remove)
  • Add the cake mix to the springform and bake for 50 minutes, until the top
    of the cake turns a lovely golden colour
  • Remove from the oven and let cool (can be eaten warm or cold) — it keeps in the fridge for up to 3 days
