- 200g soft butter
- 4 eggs
- 200g granulated sugar
- 1 tsp vanilla extract
- 150g coarse semolina
- ½ tsp baking powder
- 1 tbsp lemon juice
- 1 kg quark
- 150g blueberries (fresh or frozen)
The Method
- Preheat the oven to 200°C (fan)
- Whisk the butter, eggs, sugar and vanilla then add the semolina and baking powder
- Stir in the lemon juice and quark
- Carefully stir in the blueberries
- Grease a springform cake tin with butter and then cover with a light dusting of semolina (this will make the baked cake really easy to remove)
- Add the cake mix to the springform and bake for 50 minutes, until the top
of the cake turns a lovely golden colour - Remove from the oven and let cool (can be eaten warm or cold) — it keeps in the fridge for up to 3 days
