Lamb Kebabs

Ingredients

Ingredients

  • 300g diced lamb (or chicken if you prefer)
  • Pitta bread or wraps
  • 2 tomatoes (sliced)
  • Mint sauce

For the marinade

  • 1 onion (finely chopped)
  • 1 tbsp dried oregano
  • 1 tbsp dried mint
  • 1 tbsp paprika powder
  • ¼ tsp chilli flakes
  • 3 tbsp lemon juice

For the salad

  • ½ white cabbage (finely shredded)
  • 3 tbsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper

For the Garlic Mayo

  • 4 tbsp mayonnaise
  • 4 tbsp low fat natural yoghurt
  • 1 crushed garlic glove
  • Salt & pepper

The Method

  • Mix all the marinade ingredients and coat the meat — let it sit for at least 30 minutes
  • Shred the white cabbage, add the lemon juice, olive oil, and seasoning and let it sit for at least 30 minutes
  • Combine the garlic mayo ingredients and let is sit in the fridge until you’re ready to serve
  • Fry the marinated meat in a pan for 10 minutes, add a splash of water if the mixture becomes too dry
  • Warm up the pitta bread or wraps to instructions
  • Serve

Follow these directions to construct your kebab:

  • Spread 1 tsp of mint sauce on one inner side of the pitta bread (or down the middle of your wrap)
  • Spread 1 tbsp of garlic mayo on the other side of the pitta
  • Add a heaped tbsp of white cabbage
  • Add a few slices of tomato
  • Add a couple of tablespoons of lamb
