Courgette and Tomato Bake

  • 2–3 courgettes (around 600g)
  • 90g pesto
  • 1 large onion
  • 6 tomatoes
  • 50g seed mix
  • 50g grated cheddar cheese
  • pinch of cayenne pepper

The Method

  • Pre-heat oven to 175°C (fan)
  • Thinly slice the courgettes and mix with the pesto
  • Slice the onions and tomatoes
  • In an ovenproof baking dish, create a layer of courgette, then a layer of tomato and then onion — repeat with another layer
  • Mix the seeds, cheddar and cayenne pepper and then sprinkle over the top of the final layer
  • Bake in the oven for about 20 minutes (the cheese should go nice and crispy golden)
